This is one of my top favorite meals being that 1) It supplies a good balance of protein and carbs. 2) Ingredients are simple, which makes calorie tracking easy. 3) Easy prep for the whole family to enjoy!
2 large sweet potatoes*
1lb extra-lean ground beef*
1 cup chopped asparagus
1 cup chopped broccoli
½ cup chopped yellow onion
Brown meat and season with salt, pepper & garlic. Set aside. Pre-heat oven @ 400 degrees and begin slicing potatoes into thin (approx. ¼ inch) rounds. In a lightly greased 9x13 baking pan layer potatoes, chopped veggies, cooked meat and repeat for 3 layers. Cover with foil and bake for approx. 35-40 minutes. To test if it’s done poke potatoes with fork. If potato is tender and the fork goes in smoothly than it’s done. For additional yumminess, I very lightly sprinkled shredded cheddar cheese (optional) and broiled on high 5 minutes.
I topped my dish with plain Greek yogurt, A1 sauce and Cholula hot sauce.
*Recipe serves 4/5- depending on how much each individual eats. You may want to add a couple more ounces of potato and/or meat.
Side note: If you are not a fan of the veggies I used, get creative and add your own choice of veggies/ seasonings. It’d be pretty hard to mess up this amazing casserole. ;-)
