If you haven’t noticed yet, I’m a total breakfast lover. Especially for pancakes! Every night I anticipate my breakfast the next day. There are numerous ways to make pancakes but this one really hit home! The ingredients are simple, extremely yummy and moist. Sweet potatoes make everything taste better especially in the fall!
This recipe serves two.
1 cup raw oats
4oz baked sweet potato
1 whole egg
3 egg whites
½ tsp baking soda
¼ cup unsweetened cashew or almond milk
Cinnamon (as much as you’d like)
1 tbsp. Stevia/Monk Fruit in the Raw
Mix all ingredients in a food processor/ blender until batter is smooth and thick. If batter is too thick to blend add a little cashew milk. On a hot skillet (slightly oiled) pour batter, cook till slightly browned. Flip and cook opposite side. Careful not to over-cook, you want them moist! Slightly under-cooked in the center is best. You may split entire batter into 2 (making 2 large pancakes) or in 4!

These panckaes provide a great source of energy because they supply a generous amount of protein and carbs. Enjoy these pre-workout for a boost of energy or post-workout for a great recovery!
I drizzled mine with honey and a little Walden Farms Pancake syrup. You may top them with what you prefer. :-)
